Wonder's Low-Cal Bread Pudding

This is a recipe contributed by former forum host Wonder to our Bipolar Disorder Weight Loss Support program. High fiber bread, lowfat milk, healthy substitutes and applesauce make this low calorie dessert a taste treat.

Ingredients:
6 slices diet bread (high fiber, low calorie), torn in pieces
3 cups 1% milk
3/4 cup egg substitute
1 cup Splenda sugar substitute
2 tablespoons applesauce
1/2 cup raisins (optional)
2 tablespoons vanilla
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon salt

Preheat oven to 325 degrees. Combine all ingredients and stir. Spray 9x11 pan with non-stick spray. Pour ingredients into pan. Bake uncovered one hour. Makes 8 servings.

Per serving:
Without raisins: 83 calories, 3 g fiber, 1 g fat, 1 Weight Watchers point
With raisins: 143 calories, 6 g fiber, 1 g fat, 2 Weight Watchers points
