Bipolar Disorder Weight Loss Support

A recipe for tasty chicken salad that can be a healthy part of a weight loss diet plan, sent in by community member Cheryl for the About Bipolar Disorder Weight Loss Support program.

Cheryl's Note: This is one of my favorites. I didn't put exact amounts in, as it is to taste.

Mix together:

cooked, diced chicken breast
chopped onion (I like green onions)
chopped celery
chopped nuts (walnuts, pecans, pine nuts or what you prefer)
apple chunks (optional)
raisins (optional)

Add curry powder (couple of teaspoons or to your taste - I like lots)

Add enough mayonnaise (light or non-fat) to dampen and hold it together.

Let set awhile (best the next day) to let the flavors blend.

Add to lettuce for a great meal. Also makes a good sandwich!
