Mikki's Easy Zesty Salad
Bipolar Disorder Weight Loss Support

Here's how to have a great tasting salad without lots of work OR lots of calories, and you get fiber along with it. Community member Mikki sent us this recipe to use in the Bipolar Disorder Weight Loss Support program.

In a one-gallon Ziploc bag put:
1 bowl of prepared salad mix per serving
1 tablespoon grated cheese per serving
Seasoning to taste with seasoned salt or no-salt seasons mix, or herbs of your choice such as basil, oregano, thyme or coriander (be careful mixing and matching; some herbs don't taste too good together)
Seal bag and mix well.

Add:
1 small to medium tomato, sliced, per serving
1/4 cucumber, sliced, per serving
1 small zucchini, sliced or diced
1 tablespoon dressing* per serving

*Dressings: Oil and vinegar and low-calorie Italian are two good choices. I also like the red wine vinegar dressing. Frequently I will have this mix with no dressing at all!

Note: After mixing, moist salad will keep for a day or two. Mixing without the cheese and letting it set for a day allows the seasonings to combine with the salad greens better.
